The short story: The doctor wasn’t amused with the results.
“Low Fat” joined “Low Sodium” as a requirement.
Sweet Potato Soup is a cream-based or coconut milk-based recipe, often with curry spice or curry paste as a foundation.
The new rule was to eliminate that fatty foundation.
To attempt something less redolent of fat, yet still tasty.
Oh, and NO curry heat. (One of us is no fun)
Recipe:
2 Tablespoons of oil. (Olive, Avocado, Grape Seed)
Two large Sweet Potatoes. Peeled and cut into cubes. ~ 1.75 pounds.
2 stalks of Celery. Diced.
One half Vidalia-type sweet onion. Diced.
Chicken bouillon. I use Better Than Bouillon® Reduced Sodium Chicken base.
Garam masala*. 2 tsp early, then 1 tsp just before serving.
Wash and dice the celery, add to a 3-quart pot with the oil.
Dice the Vidalia Onion, and add to the pot.
Sauté.
Peel and cut the sweet potatoes, and add to a 3-quart pot.
Add 2 tsp of Garam masala spice to the pot, stir to release the aroma.
Add water to barely cover the vegetables.
Add 2 tsp of low-sodium chicken bouillon and stir.
Simmer until the sweet potato is soft.
Using a wand blender, countertop blender, or food processor, puree until smooth.
Return the soup to the 3-quart pot, add the 1 tsp of Garam masala spice, stir to combine.
This should yield 2 quarts of finished soup, add a little more water if you’re under.
Dairy free, gluten free, low sodium, and much lower fat.

*Garam Masala is very similar to yellow curry powder, without any hot pepper spice.
If yellow or red curry is too much, but you like the complex medley of other spices?
Garam Masala is a good choice.
Ras al Hanout is the Moroccan equivalent. Slightly different ratios, again, with no “heat”.
You still have half an onion, most of the celery, almost all of the chicken base, and over 3 ounces of Garam Masala remaining.
