Ratatouille (you’ve seen the movie, you know the name)
Attribution: Julia Child, Art of French Cooking Vol. 1 page 503-504

1/2 pound eggplant, sliced into 3/8ths inch sticks
1/2 pound of zucchini, similarly sliced
1 tsp salt
1 1/2 cups of sliced yellow onion
1 cup green bell pepper*
2 cloves of garlic smashed and chopped
1 pound of firm ripe red tomatoes, peeled, seeded, and chopped.
Salt & Pepper to taste
3 Tablespoons of minced parsley
